Sprinkle the flour on to a plate, then coat each chicken breast in the flour and shake off the excess.

Heat the oil in a large frying pan over a medium heat and cook the chicken breasts until cooked through completely and lightly browned – approximately 2 to 3 minutes each side. Set the chicken aside and keep warm.

Pour off the oil from the pan and then add the butter, wine, lemon, salt and pepper. Cook for 1 minute.

Add the stock to the pan and bring to the boil. Sprinkle in a little flour to thicken the mixture, then cook for about 10 minutes until the liquid has reduced by half.
